Introduction
Great on salads, tomatoes, or on meats and fish. I mix 1 tablespoon per 2 cups of salad greens for a nice alternative to bottled dressings. Ingredients

Dash salt
1 TBSP balsamic vinegar (or red wine vinegar)
3 TBSP Olive oil
1 tsp Dijon mustard
Dash pepper
Directions
Allow vinegar to dissolve the salt in a bowl or sealable container. Add olive oil, pepper and mustard. Shake or beat with a fork/whisk until mustard is emulsified. Serve. Can also add any combination of fresh or dried herbs to taste.
Balsamic vinegar can be substituted with another acid such as lemon or lime juice. It's fun to experiment with different combinations. Just remember to combine 1 part acid with 3 parts oil.
