Number of Servings: 6


    1/2 cup buckwheat flour*
    1/2 cup whole wheat flour
    1 tsp baking powder
    2 tbl artificial sweetener
    1 tsp vanilla extract
    1 cup non-fat milk
    1 egg, beaten
    2 tbl melted margarine
    1 v small banana, mashed

    *If you don't have buckwheat flour, use all whole wheat flour.


In a med bowl, combine both flours, add sweetener, baking powder. In another small bowl beat the egg, add 1 cup milk, and melted margarine, vanilla. Mix liquids with the flower, mix well. Add the mashed banana. Spray a teflon pan with pam, use 1/4 cup of the pancake mixture for each pancake. Makes about 10-12 pancakes or 5-6 servings, 2 pancakes for each serving.
