Ingredients

1 Cup Dry Quinoa
2 Tbsp Olive oil
.5 cup chopped red Onions
1 tsp *Soy Sauce
1 clove Garlic
2 tbsp chopped Cilantro
1 largeEgg
.5 tbsp Thai Chili Sauce
1 cup fresh Spinach
Directions
Makes 4 - 1 1/2 cup servings
Boil Quinoa in 2 cups of water until water is absorbed and the grain is soft.
Saute red onions in olive oil over medium heat until they begin to become translucent.
Add chopped zucchini to pan and saute for 2 minutes or until soft but not overcooked.
Crack egg into sizzling onions & zucchini and stir occasionally until the egg is fried and broken into small pieces.
Add Garlic and saute for one minute.
Add cooked Quinoa and all remaining ingredients. Stir frequently until spinach is soft and the quinoa is warmed.
