Introduction

Yummy, easy to make ahead and store in the fridge. These also make great leftovers for lunch. Yummy, easy to make ahead and store in the fridge. These also make great leftovers for lunch.

Ingredients

    4-6 Large Portabello Mushroom Caps, rinsed and destemed
    1 package, Uncle Ben's quick cook long grain and wild rice, prepared
    1 10oz package frozen chopped spinach, cooked and drained
    1 pint grape tomates, cut in half length wise
    1 3.5 oz package Feta Cheese


Directions

Lay the mushroom caps in a greased 9x13 or jelly roll pan. Dispense the rice into the caps evenly then distribute spinach over top. Top with grape tomatoes, cut side down. Top with Feta Cheese. Cook for 35-40 minutes at 350 until cheese begins to brown on top.

Carefully serve mushrooms using a pancake spatula. Enjoy!

Leftover store great (even taste better).
