Introduction

I love the flavors of this recipe! It reminds me of the flavors of Mexico or Caribbean, with the lime dressing. I adapted it from a salad I had at a local resteraunt. Ingredients

    1 Bag of fresh green salad mix-anything you like
    3 scallions
    1 cup corn- I love to roast the corn and shave o off cobb
    1 can black beans, rinsed and drained
    1 cup Reduced Fat Shredded Cheddar Cheese-optional
    1 cup sliced mushrooms
    1 cup cherry/grape tomatoes- I like to leave whole
    1 pkg of Chicken Strips
    Just enough Newman's Own Lightned Up Light Lime Vinaigrette to toss and coat veggies.

Directions

Toss all ingredients together. I like to let it chill for 30minutes before serving for the flavors to marry. This can be adapted so many differnt ways!
