Ingredients

    6 C. cooked red kidney beans, (or 3 cans rinsed and drained)
    3 C. water
    2 C. frozen yellow corn
    1/4 C. apple cider vinegar
    8 oz. frozen spinach
    1 medium onion, chopped
    1/4 C. sugar
    Cayenne pepper, to taste (optional)

Directions

Place all ingredients in a large soup pot. Simmer for 20 minutes or until onion is tender.

For a little extra excitement, make it spicy with cayenne.

Makes 12 one-cup servings.
