Ingredients

    1/4 cup frozen asparagus cuts, cooked according to package directions
    1 slice boiled ham (97% fat free), cut into bite size pieces
    2 egg whites
    1 whole egg
    1 slice reduced-fat provolone or 1/8 c reduced fat shredded cheese of choice
    Cooking spray.

Directions

Preheat broiler. Spray a medium oven-safe saute pan with cooking spray and heat over medium heat. Add asparagus and ham and saute until heated through. Meanwhile, scramble 2 egg whites and 1 egg (omit the third egg's yolk if even lower fat content is desired/required). When the asparagus and the ham are heated, add the eggs and stir the mixture quickly for 20 seconds. Allow to cook for two minutes. Break up the cheese and sprinkle on top. Place under the broiler for 2-3 minutes, or until puffed and browned on top. Serve with high fiber toast, if desired.
