Ingredients
-
9 oz. linguine
1 cup frozen peas
3 slices bacon
1 cup chopped onion
3 cloves garlic
1/2 teaspoon thyme
1/2 cup fat-free half and half
1/2 cup shredded parmesan
Directions
Cook pasta in boiling water - do not add salt to water. When pasta is almost al dente, add peas to pasta and water. Drain, but reserve 3/4 cup of pasta water for later.
While pasta is cooking, cook bacon in large pan until crispy. Remove bacon and all drippings, except for 2 tsp. (or less) of drippings to saute onions. Saute onions for 3 minutes and then add garlic and thyme to pan for an additional minute. Stir in drained pasta and peas, reserved cooking liquid, and half and half. Cook for 2 minutes or until sauce thickens. Crumble bacon on top and toss with Parmesan. Add salt and pepper to taste.
