Introduction

I tweaked this muffin recipe to make it a little bit more healthy than the original, although you could easily reduce the fat by subsituting unsweetened applesauce for some of the butter.
The recipe also doubles easily and the muffins freeze well.

Ingredients

    1 Cup whole wheat pastry flour
    1 1/2 tsp baking powder
    1/4 Cup (1/2 stick) softened or melted butter
    1 1/2 tsp cinnamon
    1/4 tsp Kosher salt
    1/2 Cup packed dark brown sugar
    1 large egg
    1/2 Cup skim milk
    1/2 Cup raisins (dried cranberries are good too!)

Directions

Makes 8 muffins.
Preheat oven to 375. Grease muffin tins or use paper muffin cups.
Sift together the flour and the baking powder.
In another bowl, blend the butter, cinnamon, salt and brown sugar until well combined. Blend in egg and skim milk. Pour wet ingedient mixture over the flour mixture. Stir just until combined. There will be lumps, do not over-stir. Add raisins.
Pour batter evenly into prepared muffin tin. Bake in the center of the oven for 16 to 20 minutes.

    Incredible!
    These were amazing! I did some minor changes to make them healthier. Instead of butter I used 1/2 cup unsweetened applesauce. I used egg whites from a cartoon since I didn't have any real eggs on hand. They were fabulous and super moist. Kids love. Threw all in bowl and mixed, no special steps. - 8/29/13
