Introduction

Ingredients

1 16 oz can 99% fat free low sodium chicken broth (beef may be better but I only had chicken)
1/3 green pepper chopped about 1/2 cup
1 slice of onion chopped about 2 tbs
2 oz roast beef lunchmeat (mine was a variety with less calories than shown, but I used SP dictionary)
1 light string cheese (1 oz)
Directions
Open can of broth and pout in microwavable bowl
Chop pepper and onion add to broth
Tear or slice beef lunch meat into bite size pieces
cut string cheese into small pieces
add both to broth
(add a little garlic powder and pepper to broth if available. I did not have it but it would have made a difference)
Microwave on high (use microwave cover to prevent splatter) 5-10 minutes until peppers are to your liking for texture.
Let cool 2-3 mins.
VERY HOT!!! Bowl and soup
Pretty yummy
Split in half for an addition to lunch or each the whole bowl for a complete lunch.
If you like mushrooms and have them on hand they might be good too.
And yes I know sodium sucks, but lunchmeat and broth what can I do... The version I made has actually 850 but in the ingredient list there was no reduced sodium broth
