    8 oz. boneless skinless chicken breast, cooked and cubed
    4 tbsp. light mayo
    1 tbsp. light sour cream
    1/2 c. diced celery
    1/4 c. diced raisins
    1/2 c. diced green apple
    3 tbsp. minced red onion
    1/2 tsp. mustard powder (not spicy)
    salt & pepper to taste


Mix all ingredients together, and chill. Better the next day. Great on crackers, soft bread, stuffed into a tomato or on top of a bed of lettuce.

  • No raisins. No apples, but grapes cut into quarters. Chopped shredded cabbage. Added chives & cilantro. No "lite" anything. Total hit w/ family. (I added spiralized zucchini & sliced almonds to my own serving. Yum!) - The "perfect" way to use rotisserie chicken! : ) - 4/4/17
