Introduction

I got the basic recipe from Taste of Home. You are supposed to use 3 whole eggs and the 1 T is supposed to be lemon zest, but I never have lemon's on hand. I just use what I have. I reduced the sugar and I suppose you can use whatever sweetener you want. It's great on scones or with a plain cookie like macaroons. I got the basic recipe from Taste of Home. Ingredients

    -3 eggs (this recipe I used 3 egg yolks and 1 whole egg)
    -3/4C sugar
    -1/2 c plus 1 T lemon juice
    -3T Smart Balance Omega Light buttery spread (melted in micro about 30 seconds)

Directions

--Mix eggs and sugar in a heavy saucepan intil well mixed and then stir in the lemon juice and melted butter. Stir over med/low heat for 15 minutes or until thick.

--Chil/keep in the refridgerator covered for up to 1 week. Great on scones, toast or plain cookies like macaroons (all not calculated in the nutrition)

--Makes about 1 1/2 C or 24 servings of 1 T each.

    Incredible!
    I have never made lemon curd before. This recipe was easy and tastes great. I put some on my oatmeal in the morning and it is like having lemon pie for breakfast. Mmmmm good! - 11/5/11
