Introduction

Number of Servings: 6

Ingredients

    Dressing:
    1/4 cup olive oil (can be substituted with Udo's oil or Flax seed oil)
    Juice of 2 limes or 1/2 cup reconstituted lime juice
    1/4 cup chopped cilantro
    1 tsp. cumin
    salt & freshly ground pepper, to taste

    Salad:
    19 oz. can of black beans, rinsed & drained
    1 large red bell pepper, diced
    12 oz. can kernel corn, drained
    3 stalks of green onion (white & green parts), finely chopped
    1 jalapeno pepper, seeded and minced

Directions

Stir together the ingredients for the dressing in a medium sized bowl (preferably one with a lid for later storage in the fridge).
Add the salad ingredients and stir to combine with dressing. Adjust seasonings to taste. This salad can be enjoyed at room temperature or cold from the fridge.
Serves 6.
