Ingredients

2 c. whole wheat flour
3 tsp baking powder
1/8 tsp salt
2 tbsp butter, unsalted
1 tbsp sugar (or honey)
1 egg
1 1/4 c. milk
3/4 c dried cranberries
1/2 c. chopped toasted walnuts
Directions
Preheat oven to 375*
Combine flour, salt, baking powder, and sugar (If using honey, combine honey with the milk and egg) in a large bowl.
Rub in the butter (You don't want it completely uniform, small chunks of butter are good)
stir in walnut and cranberries.
In a separate bowl beat together the milk and egg (if using honey, also the honey).
Pour the wet ingredients into the dry and stir until just combined.
Portion into a prepared 12 cup muffin tin.
Bake for 10-20 minutes, or until a toothpick inserted in the middle comes out clean.
