Ingredients

6 leaves romaine or butter lettuce
8 oz. chicken breast tenderloin, diced
1 1/2 c peeled chopped cucumber
1/8 c finely chopped onion (or scallions, if you like them - we don't!)
1/4 c shredded carrot
2 tbsp. Kraft Light Asian Sesame Dressing
3 tbsp. seasoned rice vinegar
garlic powder
salt & pepper
chili powder or red pepper flakes
coriander
Directions
In a medium-sized bowl, combine cucumber, onion, carrots, rice vinegar, and dashes of chili powder, salt, and pepper. Mix and put in the refrigerator.
Spray a small pan with nonstick cooking spray, and cook chicken cubes on medium high heat. Season with garlic powder, salt, and pepper while cooking. Stir occasionally and continue cooking until done throughout; about 5 minutes.
Transfer the cooked chicken pieces to a small bowl, and add the Asian sesame dressing. Toss to combine.
Lay out lettuce leaves and spoon veggie mixture and chicken evenly into the lettuce. Fold or wrap lettuce leaves around the mixture and enjoy!
Makes 2 servings, 3 leaves each.
