Ingredients

2 medium sized pototoes, each cut in to 8 wedges
1 medium red bell pepper, cut into 1/2" wide strips
1/3 c. sliced onion
1 1/2 t Extra Virgin Olive Oil
1 t garlic, minced
1/4 t cayenne
1/4 t crushed red pepper flakes
salt to taste
black pepper to taste
Directions
Pre-heat oven to 400.
Mix together all of the ingredients. Place on a large baking sheet so that is all in a single layer (if the pan is not non-stick, add a misted layer of Extra Virgin Olive Oil cooking spray.
Cook for 15 minutes, flip all veggies over, and bake for another 15 minutes.
