Ingredients

3 cups of cooked elbow macaroni
1 Tbsp Olive Oil
1 Tbsp All-purpose flour
1/2 cup skim milk
1/2 cup Butternut Squash puree
1 1/2 cups Shredded Cheddar cheese
1/4 cup Low Fat Cream Cheese
1/2 tsp salt
1/8 tsp black pepper
1/8 tsp paprika
Directions
*Cook your butternut squash by steaming until soft, then puree with a hand blender or food processor. Puree until very smooth. You can do this beforehand and freeze in 1/2 cup portions for easy prep*
Add the olive oil and flour to a large saucepan over medium heat, stirring constantly until it is a thick paste (not browned) - about 1-2 minutes.
Add the milk and cook, stirring intermittently until mixture begins to thicken, about 3-4 minutes.
Add the squash puree, cheddar cheese, cream cheese and seasonings. Stir until the cheeses have melted and the sauce is smooth.
Add macaroni noodles and stir.
