Directions

I cook for my family and like to have extra for lunches so I typically use 4 pieces of chicken breast, boneless and skinless (1/2 breast = 1 piece). I place the chicken in the slow cooker and top with 1 jar of salsa and 1 cup of corn (optional) or use the salsa with corn and beans already in it. Leave it on low all day while at work. When I get home I prepare brown rice and serve the chicken and salsa over the rice. You can top with shredded cheddar cheese if you prefer to add some extra calcium and protein. You can also prepare this on the stove by sauteing the chicken in olive oil until cooked (about 10-15 minutes) then add the salsa and simmer another 10 minutes while you are preparing the rice.
