Introduction

This is old oat bran muffins with some changes, ie, applesauce instead of oil, Splenda in place of sugar, and brown blend splenda for the brown sugar and non fat milk. Ingredients

    2 Cups Ouaker Oat Bran Muffins
    1/4 cup packed Splenda brown sugar blend
    2 teaspoons baking powder
    1/2 teaspoon salt (optional) I used about this much
    1 cup non fat dry powder milk mixed with 1 1/2 cup water
    Egg Beaters Substitute for 2 eggs
    1/4 cup of splenda
    2 tablespoons unsweetened applesauce

Directions

Preheat oven to 425' F Mix dry ingredients thoroughly. Line one dozen medium muffin cups with paper baking cups or spray bottomes with non stick cooking spray. Add combined milk, egg beaters, applesauce and splenda: mix until just moistened. Fill prepared muffin cups 3/4 full. Bake 15-17 minutes or until golden brown. Variations: Mix into batter, 1/4 cup walnuts, and or 1/2 cup raisins, Or mix into batter 1/2 cup fresh or frozen blueberries or 1/2 cup mashed, ripe banana. 121 Calories per muffin. I made some mini muffins which would be about 60 cal a piece. Various spices can also be added such as cinnamon.
