Introduction

This is a dish that is packed with flavor, yet easy and light. Perfect for that dinner guest, or bbq. Pair it with black bean salad in my recipe book, and you have a super dish. Ingredients

    2 T. grated lime peel
    1 T. cumin seed (or 1t. ground cumin)
    1 T. cracked black pepper
    1/2 t. salt
    2 T. olive oil
    1 clove garlic, finely chopped

    4 boneless pork loin or rib chops, about 1 inch thick (2 pounds)---or whole loin.

Directions

Mix all ingredients except pork loin to make a rub.
Rub into loins and let set covered in refrigerator for a bit. More time=more intensity in flavor.
Over hot grill, cook 4-6 minutes, turning frequesntly, itil pork is no longer pink. (it should feel like the bottom of your palm, under your thumb, when you make a light first.)

***I have cooked these (loins) in the oven middle rack under the broiler turning once until done.

    Just made this for the first time: the rub is good. I found that just a squeeze of lime juice before serving made a big difference! Next time I'm going to try adding a bit of lime juice to the recipe and about a teaspoon of chili powder . - 6/28/11

    This was SO good. I served w/ sliced mango (as suggested) and also some avacado slices. Next time I will make a mango salsa w/ Mango, avacado, cilantro, jalepeno and lime juice to go with it. - 6/22/11

    I just made this for dinner and it was AMAZING! I did make a couple changes that I think made it even better. I add cilantro to the mix and I sauteed some onions for the top of the pork. It was really, really, really, really yummy! - 1/21/11

    Just put mine in the frig. Will cook in about 4 hours! Can't wait to try this! I love latin food! - 1/15/11
