Ingredients

    CAKE:
    1 box yellow cake mix
    11 oz can mandarin oranges, with juice
    4 eggs
    .25 cup applesauce, unsweetened

    FROSTING:
    19 oz. can crushed pineapple, drained
    (works out to be about 2 cups pineapple)
    3.4 oz package instant vanilla pudding
    16 oz Lite Cool Whip

Directions

Preheat oven to 350. Spray 3 8" round pans with Pam and coat with flour. Mix together cake mix, oranges with their juice, eggs and applesauce. Divide batter among prepared pans. (Yes, layers will be thin). Bake for 15-20 min's..or until toothpick comes out clean. Cool layers on wire racks.
For Frosting: Thoroughly mix drained pineapple with instant pudding then fold mixture into Cool Whip. Fill and frost cooled cake layers. Refrigerate until ready to serve, so the "frosting" doesn't melt!
