Introduction

Migas usually has a lot of veggies in them, and I sometimes add lots of onion, cilantro, tomatoes, jalapenos, etc. This is the bare bones version I make on a rushed morning for me and the kids! Some fruit on the side and a cup of coffee makes a lovely meal. Ingredients

    2 TBSP Lard
    6 whole eggs
    6 regular corn tortillas
    Salsa
    salt and pepper to taste

Directions

In a cast iron skillet, over medium heat, add the lard and start warming. Meanwhile, coarsely chop the tortillas. When the lard is hot but not smoking, add the tortillas, stirring occasionally to prevent burning.

Whisk the eggs with a little salt. When the tortillas are crisp and starting to turn golden, add the eggs and stir while cooking until desired consistency. I like mine a little soft.

Top with salsa, cheese, veggies, anything!

Makes 6 smallish servings or 3 meal sized servings.
