Introduction

Ingredients

2 tomatoes
1 zucchini
1/2 medium-sized onion
20 sprays of imitation spray butter
1/4 cup Parmesan cheese
1 summer squash
Spices to taste: poultry seasoning, Italian seasoning & parsley (approx. 2 tbsp of each)
Directions
Slice tomatoes, zucchini, and squash into 1/4" slices.
Chop onions {add to taste more or less or not at all}.
In a large skillet add 1/4 cup of water and 10 spritzes of the imitation butter spray.
Add onions and cook until they are clear.
Add squash and zucchini in layers.
Then place tomatoes on top in layers.
Between each layer sprinkle with poultry seasoning, Italian seasoning and parsley and spray with butter.
Add more water as needed, cover and simmer for 10 - 20 minutes.
Remove all ingredients from pan once they are all tender. Place on a serving dish and sprinkle with Parmesan cheese for a low fat summer treat.
You can also add cheddar cheese for a higher calorie version. This recipe is good served warm with chicken or chilled as a summer lunch treat.
