Ingredients

    1 zucchini (230 g),
    onions - 40 g
    mushrooms - 100 g,
    celery - 40 g
    carrots - 20 g
    olive oil - 1 tbsp.,
    2 little tomatoes - 40 g
    cheese lowfat - 15 g (1 slice for baking top)

Directions

The carrot, onion and celery cut into small cubes and fry in the tablespoon of olive oil.
Add sliced mushrooms and some water - 10 minutes to extinguish under cap. Stuffing salt and pepper.
Cut zucchini across into slices of height in 3 fingers. Remove core. Put zucchini in refractory dishes with high walls. Put mashroom filling in the pits of zucchini slices, packed.
Heat the oven to 250 degrees (Celsius) (mode Grillo). Cut Tomato across at the same circles (not too thick), the quantity of zucchini slices and put on top of each circle zucchini.
Bake for 15 minutes in the hot oven. Put cheese slices on top and continue baking for light brown top. Finish)

    Very Good
    this is a really great tasting meal, but it would help if u tidy up the recipe a little... i made it as a side-dish for bbq chicken, and it was delicious. however, there wasn't enough stuffing to fill all the 4 pieces of zucchini, so i had to make some more... - 9/14/09
