Introduction

The original recipe calls for you to cook them in a frying pan in oil, I either cook them in a dry pan, or in the oven for about 10 mins,

They are high in fat, but keep in mind we're talking about HEALTHY fats that are required for healthy neurological and reproductive system function. I find them a good way to up my fat intake for the day when I haven't really eaten much. They're very filling as well.

Ingredients

    1/2 cup mixed nuts
    1/2 cup sunflower seeds (hulled, roasted)
    Parsley to taste (I use about 7 springs)
    1 clove garlic

    6 tbsp tahini (you can use any other nut butter if you prefer)
    Juice from 2 lemon wedges
    Your favourite cheese (I use a bunch of crumbled goat cheese, I estimated it to be about 1oz)

Directions

Combine first 4 ingredients in a food processor, process until finely chopped.

Transfer into bowl, add the remaining ingredients.

You want to product to be moist enough to form patties. I find this varies with the freshness of the nuts and the kind of cheese I use, feel free to add more tahini/nut butter or lemon juice if it's not moist enough to stick together.

At this point you can coat them in breadcrumbs if you wish.

Either:
Heat skillet/frying pan with a bit of oil on medium, or use a dry pan on medium. Cook patties on either side until slightly browned (approx 3-5mins each side).

OR bake in oven for about 10mins on 350 degrees.

Transfer onto a plate and serve with your favourite condiments (I like mustard).

Makes about 4 medium sized patties.
