This is a quick, easy side dish, good for a little variety. This is a quick, easy side dish, good for a little variety.
Number of Servings: 4

Ingredients

    2 medium yellow (or zucchini) squashes, sliced and quartered (approx 1/2" pieces)
    1/2 cup yellow or white onions, sliced in thin strips
    1 1/2 cups cherry tomatoes, halved or whole
    1-2 garlic pods, minced
    1 tbsp olive oil
    5 basil leaves, torn

Directions

Makes approx 4 1-cup servings

Preheat non-stick skillet over medium high heat for 1-2 minutes, then add 1 tbsp olive oil. Add onions, garlic and squash and saute for 5 minutes. Add cherry tomatoes and basil, reduce heat to medium-low and saute 5 more minutes. Serve immediately.

    This was so good. I was really apprehensive about it, but it was really yummy. The sweetness of the tomatoes went so good with the squash. I will make this again! - 8/30/09

    I added the corn of 1 fresh cob and 1 pat of butter. Probably could've skipped the butter to save on calories, but it was delicious. Thanks for sharing! =) - 8/24/08
