Introduction

I was dreaming of the Mediterranean summer when I concocted this recipe!

This is a colorful healthful way to stretch chicken and get lots of great veggies into your meal. Serve with your favorite brown rice, bulgar or barley for side and you have an entire meal!

This is a colorful healthful way to stretch chicken and get lots of great veggies into your meal. Serve with your favorite brown rice, bulgar or barley for side and you have an entire meal!

Number of Servings: 4

Ingredients

    1 lb chicken breasts (no skin or bone)
    1 clove garlic, minced
    1 11 oz can artichoke hearts (not marinated... can substitute frozen), diced
    1 large tomato, diced
    1/2 large sweet red bell pepper, diced
    2 low fat string cheese, diced
    1/4 c white wine vinegar (you could substitute wine or apple juice)
    cilantro for garnish

Directions

Spray non-stick oven proof sautee pan, heat over medium high heat and add garlic.
Once pan is up to heat, add chicken breasts, season with s/p; brown on each side (about 5 mins).
Combine all diced vegetables and cheese; add to top of chicken in pan.
Pour vinegar over top, season once again with s/p.
Put directly into preheated oven 350 deg and bake until chicken is cooked through.

Makes 4 very generous servings

    Tasty--I'm not a huge red pepper person, but we cooked them al dente, so not bad. I might sub for tomatoes later. I was disappointed not to see a recommended cooking time--makes it harder to guesstimate in advance how much time to plan for preparing the meal. - 8/5/09
