Introduction

Number of Servings: 12

Ingredients

    2 cups whole wheat flour
    2 teaspoons baking powder
    1/4 cup Splenda sugar mix for baking
    1/2 cup blueberries (frozen or fresh)
    2/3 cup milk (I use Lactaid)
    1/3 cup Canola Oil
    1/2 tablespoon half and half (fat free- for topping)
    2 teaspoons granulated sugar (for topping)

Directions

Preheat oven to 400 degrees.

Mix dry ingredients together. Mix in blueberries. Can also mix in 1/4 cup cut up Cranberries but not calculated for this.

Put in liquid ingredients. Mix until becomes like bread dough.

You can either roll out or pat out to circular pie shape and cut into 12 pieces or simply pull dough and shape into circle and flatten onto baking sheet (I put on parchment paper as tends to stick). Using a pastry brush, brush on the half and half on each scone. Top with sprinkled granulated sugar. Put into oven for approximately 20 minutes.

Serves 12.

    Yummy. I used half white, half wheat flour, used buttermilk and 1/2 t. baking soda and the 1 cup of blueberries. This is good and will satisfy my scone cravings. - 8/19/09
