Introduction

Delightfully delicious twist on your basic spaghetti! Delightfully delicious twist on your basic spaghetti!
Number of Servings: 4

Ingredients

    1 large can of organic diced tomatoes (the nutritional info added up to 4 regular cans of tomatoes)
    3 cloves garlic, finely minced
    2 oz kalamata olives, roughly 20 olives
    2 Tbsp capers
    3 oz goat cheese
    dash of cayenne pepper (optional)

Directions

Bring a pot of water to a boil. Add pasta and cook al dente. While water is boiling/ pasta is cooking begin to make sauce. Put tomatoes into a frying pan and bring to a simmer. Using the back of a spatula, roughly crush the tomatoes.
As the sauce is simmering, drain pasta.
Add capers, olives, garlic and cayenne pepper to tomatoes. Simmer for 10-15 minutes, occasionally stiring and roughly crushing the mixture with the back of the spatula to make a chunky sauce.
Serve over the top of pasta and sprinkle with crumbled goat cheese. Can be made vegan by nixing the goat cheese and adding tempeh while the sauce is simmering. Delicious either way!
Makes 4 dinner servings.
