This is a crepe recipe made with all low-fat and low-cal ingredients. No, it's not quite as good as the whole milk, with-butter version, but if you want some crepes then this is a good way to go! Ingredients

    Whole Wheat Flour
    Skim Milk
    Egg Substitute
    Vanilla Extract
    Salt
    Splenda

Directions

Makes 8-10 crepes, depending on thickness.

In a mixer, blend together all ingredients. Make sure to add the milk and the flour slowly to prevent lumpy batter.

Use a non-stick 8" skillet on medium to medium-high heat, pour 1/4 - 1/2 c of batter and twirl the pan to coat the bottom. Cook for about 30 seconds and flip, then remove. You can keep prepared crepes warm in the oven at 200 degrees until ready to serve.

Top with fruit, nutella, syrup, or cinnamon & sugar (or be creative!) ... note that the calories for this recipe are for the crepes themselves only.
