Introduction

Instead of making meatballs, I save time by just browning the meat then making the sauce and serving the whole thing over rice. Instead of making meatballs, I save time by just browning the meat then making the sauce and serving the whole thing over rice.
Number of Servings: 4

Ingredients

    1 lb ground beef or turkey (I use turkey)
    3 cups cooked rice
    1 green bell pepper
    1 15oz can pineapple, drained (reserve juice)
    1/4 cup packed brown sugar
    2 Tbsp cider vinegar
    1 Tbsp flour
    2 Tbsp Soy sauce
    3/4 cup catsup
    1/3 cup pineapple juice (reserved)

Directions

Prepare rice per package directions.

Brown ground turkey, drain & set aside.

Mix the brown sugar & flour in a sauce pan. Add the vinegar, pineapple juice, soy sauce & catsup. Heat & stir until it boils and thickens. Stir in the pineapple, green pepper, and ground turkey. Cook until hot. Serve over rice.

Serves 4 with 3/4 cup rice & 1/2 cup sauce.
