Number of Servings: 8

Ingredients

    1 pound extra-lean ground turkey
    1/4 cup chopped onion
    1 cup water
    1 envelope taco seasoning
    1 15oz can black beans, rinsed & drained
    1 15oz can Mexican diced tomatoes, undrained
    6 8-inch flour tortillas
    1 16oz can fat-free refried beans
    1.5 cups shredded Mexican 4-cheese blend

Directions

Cook the turkey in a large skillet with onion until meat is no longer pink. Add water & taco seasoning, bring to a boil. Reduce heat, simmer uncovered 2 minutes. Stir in black beans & tomatoes. Simmer uncovered 10 additional minutes.
Place 2 tortillas in a greased 9x13 baking dish. Spread half of the refried beans over tortillas, then half the turkey mixture over that. Sprinkle with 1/2 cup cheese. Repeat layers. Top with remaining tortillas & cheese. Cover & bake at 350 for 25-30 minutes or until heated through and cheese is melted. Cut each tortilla stack into 4 pieces.

    used morning star veggie crumbles and whole wheat tortillas. turned out awesome! even the meat lover boyfriend thought it was yummy....
    probably going to throw some lettuce and fresh tomatoes on it next time before serving. very good none the less!! :)

    This was SOOO good. My husband ate 4 servings! LOL! It was very hard to limit portion size since it was so yummy, but we ended up with 3 pieces in the freezer for self-made microwave dinners. I took a star off because of the high calorie content. - 5/1/07

    Incredible!
    I made this today except I used Venison instead of ground turkey. I also didn't have refried beans so I added 1 cup corn and used my homemade taco seasoning because it has less salt. I also added 3 cloves of garlic. Very good - 5/5/21

    A friend of mine made this before I started SP and it was a hit with kids and adults alike. From my experience making lasagna, I would recommend putting 1/2c of the meat mixture on the bottom (between the pan and the tortilla). I think that would make cutting that lower layer of tortilla easier. - 7/6/14

    Incredible!
    Super yummy! I made it pretty much to the letter, except that I used corn tortillas because I had those on hand (bonus, fewer calories), and I used my own spices rather than a taco seasoning packet (brings down the sodium). This dish was heavy and filling. I also topped it with some salsa. Delish! - 10/27/12
