Ingredients

    SALAD:
    1/2 lb. whole wheat spaghetti
    2 cups baby spinach (roughly chopped)
    1 cup chopped tomatoes
    1 medium carrot, peeled and julienned
    *1/2 red bell pepper, seeded and sliced into thin strips (optional)
    1/2 cup fresh cilantro, chopped
    DRESSING:
    3 Tbs. lime juice
    2 Tbs. toasted (dark) sesame oil
    1.5 Tbs fresh ginger, grated
    3 cloves garlic, minced
    1.5 Tbs rice vinegar
    1 Tbs. sugar
    *1.5 tsp chili paste (optional)
    *Red bell pepper and chili paste are NOT included in nutritional facts.

Directions

Cook the noodles until al dente. While they are cooking, whisk together the dressing ingredients. Rinse and drain the noodles thoroughly and place in a large bowl. Add half of the dressing to the noodles and stir gently until noodles are coated. Add the fresh vegetables and the remaining dressing and stir to combine. Let sit for 30 minutes. Serve at room temperature.
