Ingredients

    1# 93% lean gr. turkey
    1 med. zucchini, shredded
    1 c. finely chopped onion
    1 c. finely chopped bell pepper
    3/4 c. reg. oatmeal
    1/2 c. Uncle Ben's instant br rice
    1 lg. egg
    2 T. Worchestershire sauce
    1 T. dijon mustard (reg. works fine)
    1/4 c. BBQ sauce or ketchup
    season to taste with salt, pepper, garlic, other herbs and spices.

Directions

Preheat oven to 400 degrees. Spray lg. muffin pan w/cooking spray. Gently mix all ingredients except BBQ sauce or ketchup, with hands. Divide mixture among muffin cups. Spread top with BBQ or ketchup. Bake until meatloaves are cooked thru,(165 in ctr.) about 35 min. Let stand in pan 5 min. before serving.
