    1 medium onion, thinly sliced
    22 ounces skinless, boneless, chicken breast tenderloins (or chicken breasts, quartered)
    1 can (6 oz) low salt tomato paste (like Meijer's Organic)
    8 ounces fresh sliced mushrooms
    1/4 teaspoon kosher salt
    1/4 teaspoon ground black pepper
    1 1/2 teaspoon minced garlic (about 3 cloves)
    1 teaspoon dried oregano
    1/4 teaspoon dried basil leaves
    1/4 teaspoon celery seed
    1 bay leaf
    1/4 cup dry white wine


Place the sliced onion in the bottom of the slowcooker. Add chicken pieces.

In a bowl, stir together all the remaining ingredients. Pour (or spread) over the chicken.

Cover; cook on LOW for 8 hours (HIGH for 4 hours if you must, but slower is better).

Serve chicken pieces and sauce over pasta (not included in nutritional info)
