Ingredients

    1 lb boneless chicken thighs
    1/4 lb fully cooked smoked sausage
    2 medium stalks of celery
    1 large carrot
    1 can (14.5 oz) stewed tomatoes, undrained
    5 cups water
    2 tbsp chicken bouillon granules
    1 tsp dried thyme leaves
    1 package (10 oz) frozen cut okra, thawed and drained
    3 cups hot cooked rice, for serving
    hot red pepper sauce

Directions

1. Mix all ingredients except okra, rice, and pepper sauce in a 3.5 to 6 qt slow cooker.

2. Cover and cook on low heat setting 5 hours or until chicken is no longer pink in the middle.

3. Stir in okra. Cover and cook on low heat setting 20 minutes.

4. Spoon rice into individual soup bowls; top with gumbo. Serve with pepper sauce.
