Ingredients

2.5 cups Water
1 tsp lemon pepper
1/2 tsp cumin, divided
1/2 tsp cayenne pepper
1/2 tsp chili powder
1 tbsp olive oil
4 chicken breast halves (appox 700 grams)
1.5 cloves garlic, minced
1 cup chopped onions
2 8oz cans white corn, drained
1 4oz can chopped green chilis undrained
2-3 tsp lime juice, approx 1 lime yield
2 14oz cans white beans, undrained
1 chicken bouillon
Directions
1. Combine water, lemon pepper, cumin, olive oil, and bring to a boil
2. Add chicken, return to a boil, reduce heat, simmer 20-30 mins
3. Remove chiken, chop into bite sized pieces, return to broth
4. Add garlic, onions, corn, chilis, cumin, lime juice, and beans.
5. Bring to a boil then simmer for 45 minutes.
Makes approximately 6 300g servings with 550g of chicken to start with.
