1/2 cup jarred mild giardiniera relish, drained (reserve 3 tbsp. oil) - If giardiniera is not canned in relish form, simply mince into small pieces.
1/2 cup chopped sweet onion
1 clove garlic, minced
1 (15-oz.) can Italian-style, no salt added, diced tomatoes, undrained
1 tbsp. fresh lemon juice
1 lb. mahi mahi fillets
2 tbsp. chopped fresh basil
Directions
Serves 4 (one 4 oz. fillet plus sauce)
1. Heat 1 tablespoon of the giardiniera oil in large skillet over medium heat. Add onion; cook and stir until softened. Add garlic; cook 30 seconds. Stir in giardiniera, tomatoes, lemon juice and 1/4 cup water. Bring to a simmer and cook, uncovered, 10 minutes.
2. Meanwhile, heat large cast iron or other heavy skillet over high heat until hot. Add remaining 2 tablespoons giardiniera oil; swirl around pan. Add fish; cook 2 minutes. Turn and cook 2 to 3 minutes longer or until fish is browned. Transfer fish to sauce; simmer several minutes until fish flakes easily with a fork. Sprinkle with fresh basil and season with salt and pepper before serving.
