Ingredients

    1 cup Bob's 100% Stone Ground Cornmeal
    1 cup Bob's 100% Stone Ground Whole Wheat Pastry Flour
    1/2 tsp. salt
    4 tsp. baking powder
    1 egg
    2 cups Robert's low fat buttermilk
    1/4 c. butter, softened
    2 TBSP corn oil

Directions

Preheat oven to 425F. Add 2 TBSP corn oil to 10-inch iron skillet. Heat in oven until oil is hot, but not smoking.

While skillet is heating, sift together dry ingredients into a bowl.

Add egg, milk and butter. Beat until smooth, about 1 minute. Do not overbeat.

Pour cornbread into hot skillet and cook for 20-25 minutes. Cut into eight pieces (like a pizza). Serve warm with butter and a beaming smile.
