Introduction

This is a healthier, high-fiber, low-sodium version of the very popular meat loaf muffins. This is a healthier, high-fiber, low-sodium version of the very popular meat loaf muffins.
Number of Servings: 12

Ingredients

    Ground White Turkey, 1.2 lbs
    Stove Top Lower Sodium Mix, 1/2 box
    Onion, small. chopped
    Psyllium Husk Powder, 2 Tbs
    Large Egg, 1
    Garlic Powder, 1 Tbs
    Nu-Salt (potassium chloride) salt substitute, 1/4 tsp

Directions

Combine all ingredients, and mix well by hand. 1/2 cup Kellogg's All-Bran Buds may be substituted for the psyllium husk powder. Place mixture evenly in a paper-lined muffin pan. Bake at 350 degrees for 35 minutes. Makes 12 muffins. Excellent topped with a little Tiger Sauce!

    Recipe tastes great, much better than the name would lead you to believe. Excellent idea for portion control and as one batch is enough for several meals, its a great time saver as well. Paired with a salad (mustard vinagrette topped) this is an outstanding light summer meal. - 6/11/09

    Being a fan of the regular meat loaf muffins made me want to try this recipe. It's great! These contain more of the things I should be eating and less of the bad. Great healthy spin and can't beat the Fiber. - 6/9/09

    Good
    husband did not like these...but I did I ground fiber one cereal for the pysllium... I used egg white only and omitted the salt, added poultry season instead...I make them and freeze for my lunch - 2/10/20

    Incredible!
    I love this recipe. Mainly for the easy, preparation of lunchs, by popping one of these in. I do want to figure out why it was on the dry side. I may have cooked too long? Either way, it was a tasty treat! And my cats, were standing by for any dropped crumbs. - 6/24/09
