Introduction

The trick to this recipe is to get the cashews ground down VERY FINE.
I did not top this will a berry sauce, but I will post a berry sauce recipes seperately.
I like this cheesecake frozen.
All the nuts are soaked for at least 1 hour.
I did NOT factor in the chill time.

*This easily made 2 cheesecake pies for me*

Ingredients

    CRUST
    2 C. Walnuts
    1 C Raisins

    FILLING
    3 C. chopped cashews soaked 1 hr.
    0.75 C lemon juice
    0.25 C. agave
    0.75 C coconut oil (I sub coconut milk)


Directions

CRUST
Blend well, form, chill till set

FILLING
Blend well, sweeten to taste, pour into crust and chill

ENJOY!
