Introduction

A hot and delicious soup that makes for a great dinner or side dish with lots of vegetables. I used to have it often while living in the Dominican Republic. It's pretty easy, too, try it!
Serves 2 as main dish, 3 as side dish. Is perfect to be frozen as well!!

Ingredients

    * 1 onions
    * 3.5 oz ground turkey
    * 1 potato
    * 1 sweet red pepper
    * 1 tbsp whole wheat flour
    * 2 cups vegetable broth
    * 0.5 cup kidney or black beans
    * 5 oz yellow sweet corn
    * Salt by taste
    * 1 tsp Chili powder
    * 2 tbsp olive oil
    * 3 tbsp tomato paste


Directions

Simmer the sliced onion in the oil till golden, then add the ground turkey. When the meat is done, add the diced potato and the sliced pepper and let it cook for a few minutes, till soft. Then add the flour (if you want it thicker), stir 1 minute and cover everything with the broth. At this point you also add the tomato paste, some salt (following taste) and the chili powder (use only a little bit or leave it out completely if you don't like spicy food) and let it cook for 10 minutes. Now add the beans and the corn and let it cook 10 more minutes. Serve hot. Also if it's your main dish feel free to add a tbsp of sour cream, a saussage or a slice of toasted bread. Enjoy!
