Yummy and fresh salad good with chicken or fish or just for a snack. Yummy and fresh salad good with chicken or fish or just for a snack.
Number of Servings: 4


    Mangos, 2 cup sliced into matchsticks
    Carrots, 1 cup grated (or with a veggie peeler)
    Lemon Juice, 1 lemon yields
    Olive Oil, 2 tbsp
    Salt, 1 tsp
    Pepper, black, .5 tsp


Mix all ingredients in a bowl and set in the fridge for 30 minutes or until ready to eat.

    This was tasty! I reduced the salt by half. Ours marinated for 2 hours. I recommend that you make only as much as you intend to eat. The leftovers were quite potent with lemon juice two days later. - 6/21/10
