    * Ricotta Cheese, part skim milk, 12 oz (remove)
    * Spinach, frozen, 1 package (10 oz) yields (remove)
    * Basil, 8 tbsp (remove)
    * Oregano, ground, 1 tbsp (remove)
    * *Pasta, Lasagna Noodles, 8 oz (remove)
    * Amy's Kitchen Garlic Mushroom Pasta Sauce, 1/2 cup, 6 serving (remove)
    * Parmesan Cheese, grated, 1 cup (remove)
    * Garlic, 3 cloves (remove)
    * Mori-Nu, Tofu, silken, extra firm, 340 grams (remove)
    salt & pepper to taste


Boil noodles as directed. In food processor blend tofu, ricotta, spinach, basil, oregano till creamy. Put a couple spoonfuls of pasta sauce in base of pan, layer 3 noodles, followed by half the tofu spread, sauce, noodles, tofu spread, sauce, noodles, sauce, Parmesan. Bake, at 350, covered for 30 minutes. take off foil and bake uncovered 15 minutes more.

Easy vegan option, substitute ricotta for another block of tofu and omit parm.
