Ingredients

14 oz (1 box) whole wheat spaghetti or other pasta
1/2 cup low-sodium chicken broth
1/3 cup creamy peanut butter
2 tbsp lite soy sauce
1 tbsp fish sauce (optional - available in the Asian section of the grocery store)
1 tsp sesame oil
1 1/2 tbsp sesame seeds
3 green onions/scallions, chopped
1 tsp cayenne pepper, or to taste
Directions
1. Follow directions on box to cook pasta.
2. (optional step) To toast sesame seeds, spread them in a thin layer in a dry pan over medium-high heat. Gently shake the pan occasionally until you can smell the aroma of the sesame seeds; immediately remove from heat. You can skip this step and use the sesame seeds untoasted if you prefer.
3. Combine all ingredients except for pasta in a small bowl and whisk to combine until smooth, about 1-2 minutes. Adjust seasonings to taste.
4. Combine peanut sauce with hot cooked pasta; serve hot or cold! Makes 8 servings.
