Introduction

Ingredients

    8 ounces penne pasta (I like Barilla mini penne)
    1 16 oz can diced tomatoes
    1 tsp red pepper flakes
    1 1/2 tsp minced garlic
    1 T olive oil
    salt and pepper to taste

Directions

In a large saucepan bring enough water to boil to cook pasta.

Empty can of tomatoes in a separate skillet. Heat tomatoes on medium heat. Add red pepper flakes (I like things spicy, so you may want more or less, to taste), minced garlic and olive oil. Simmer.

When water in saucepan comes to a full boil, add the penne. Stir well, and cook until pasta is al dente. Drain, add to sauce in the skillet. Add a couple of twists of fresh ground black pepper and salt if desired. Serve immediately.

This makes a generous dinner serving for two, or great side dish for four.
