Introduction

This is a bit like a crepe`, but simple and healthy. Mr. Rogers introduced me to the idea of pairing cheese with a banana, and although many raise their eyebrows at first, this combo is delicious, healthy and versitile! Ingredients

    One banana (medium works best)
    One large tortilla, plain (whole wheat can be used, but it will also increase calories and fat)
    1/2 cup shredded Fat Free sharp cheddar cheese (I use Kraft)
    Two TBS of Daisy Light Sour Cream (Fat Free can be substituted for reduction in calories and fat)
    Sprinkles of cinnamon and nutmeg (if desired)

    This could be done with a smaller banana, a small tortilla (one of the diet varieties would work perfectly) and half the amount of cheese and sour cream, to turn this full sized "sandwich" into a snack sized wrap.

Directions

Place tortilla on a plate and spread sour cream over the top, to the edges.
Sprinkle the cheese evenly over the top of the tortilla, to the edges. Leave the banana whole or slice the banana lengthwise a couple of times, so you get long thin slices that will lie fairly flat inside the tortilla when it's rolled up; the longer the slices (unbroken) the better it works.
Place the banana slices all on one half of the tortilla, for easier rolling later.
Sprinkle on spices such as nutmeg and/or cinnamon, if desired.
Microwave the whole thing, flat and open, for about 20 seconds, until ingredients become warm and cheese starts to melt.
Remove from microwave and carefully roll the tortilla up, loosely at first so that you enclose all of the banana, and then tightly as you come to the edge so that the melted cheese works like glue, holding the edges together.
Place the wrap folded side down on the plate and microwave for an additional 10-15 seconds to help the wrap hold its rolled up shape.
Allow wrap to cool briefly before eating; the banana may be hot.

    I used a low carb tortilla and apple pie spice. I think I would leave out the sour cream next time because I couldn't see that it was necessary or that it added anything. Quick breakfast or lunch. Satisfying. I will make this again. - 2/19/11

    Just tried this recipe and it was great! The only thing I did differently was that I left out the sour cream as we had run out. Even my boyfriend enjoyed it and he isn't fond of bananas. - 8/30/09
