Introduction

Adapted from Eating Well Greek Orzo Stuffed Peppers

These are so good!! I wasnt sure i would like them but wanted to try something new for dinner!! We made with Yellow Peppers and it gave them a great taste! Serve with a nice green salad for a very light fulfilling meal!

Ingredients

    4 yellow, orange, or red bell peppers
    1/2 cup (uncooked) brown rice
    1/2 pound ground turkey
    1 TBS olive oil
    1 medium onion chopped
    6 ounces baby spinach chopped
    1 tsp dried oregano
    3/4 cup shredded fat free mozarella cheese
    1 16 oz can diced tomatoes
    1 tbs red wine or balsamic vinegar

Directions

Half pepper lengthwise through the stem, leaving the stems attached. Remove the seeds and membrane. Place the peppers cut-side down in microwave safe dish. Add 1/2 inch water, cover and microwave on high until softened, 7minutes and cool

Meanwhile, cook rice to tender according to package directions.

Brown ground turkey in skillet then add onion, stirring and cooking until soft. Add spinach handfulls at a time giving it time to wilt so more can fit and oregano and cook until spinach wilted. Stir in remaining ingredients, reserving 1/4 cup of cheese and heat through. Put 1/2 cup filllng into each half and sprinkle each pepper with 1/2 tbs mozarella cheese! put in oven for about 3-5 minutes
