Introduction

This is actually a revision of a sweet potato custard recipe that I saw on SP, but this one is sugar free . Moist, creamy and satisfying, this dessert or snack packs a healthy punch of potassium. Ingredients

    1 cup mashed cooked yams or sweet potato
    1/2 cup mashed ripe banana
    2 whole eggs
    1/2 cup canned regular evaporated milk
    1/2 cup vanilla soy milk
    1/2 cup granular Splenda
    1/2 teaspoon cinnamon
    1 teaspoon vanilla

Directions

Beat eggs in mixing bowl, add yams, banana, splenda, cinnamon and vanilla and beat on med speed for two minutes or untill mixture is smooth and lump free, slowly add both milks and beat on slow speed till well combined. Spray a 9" square pan with PAM, pour in mixture and bake in preheated oven at 325 degrees for 40-45 minutes or until a knife inserted off center comes out clean.

Chill and cut into 6 servings.
