Introduction

This is very good and filling. This is very good and filling.
Number of Servings: 8

Ingredients

    1 lb turkey sausage, casing removed and sliced into 1/2 inch slices
    1 large onion, quartered and seperated
    1 cup shredded carrot
    1 can (8 oz) unsweetened pineapple chunks
    1 tablespoon cornstarch
    1/2 to 1 teaspoon ground ginger
    6 tablespoons water
    2 tablespoons soy sauce
    Hot cooked rice

Directions

In a large non-stick skillet or wok, stir-fry sausage for 3-4 min or until lightly browned. Add onions and carrots; stir-fry until crisp-tender. Drain pineapple, reserving juice. Add pineapple to sausage mixture.

In a small bowl, combine cornstarch and ginger. Stir in the water, soy sauce and reserved pineaple juice unitl smooth. Add to the skillet. Bring to a boil; cook and stir for 1-2 min or until thickened. Serve over rice if desired.

Makes: 8 1/2 cup servings
